- 4-5 lb beef roast
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 1/2 cups chicken or beef stock
- 3 russet potatoes diced
- 1 lb baby carrots
- 3 stalks celery sliced
- 1 package McCormick Pot Roast Seasoning
- 5 tablespoons butter
- parsley for garnish
Instructions
Instant Pot Method

Press the “Sauté” button on your Instant Pot and allow it to warm up until the screen indicates “Hot.” Add the olive oil to the pot. Rub the beef roast generously with salt and pepper, then carefully sear it in the hot pot on all sides until nicely browned, about 4 to 5 minutes total. This step is crucial for developing deep flavor.

Pour in the chicken or beef stock to deglaze the pan, scraping up any browned bits from the bottom of the pot with a wooden spoon. This prevents a “burn” notice. Place the lid on the Instant Pot and lock it. Select the “Manual” (or “Pressure Cook”) button and adjust the cooking time to 45 to 50 minutes on high pressure, depending on the thickness of your roast. Use this time to prepare your vegetables by dicing the potatoes, and slicing the celery.

Once the pressure cooking cycle is complete, perform a Quick Pressure Release by carefully turning the steam release handle to the venting position. Once all the steam has escaped and the float valve drops, open the lid. Carefully add the diced potatoes, baby carrots, sliced celery, and the McCormick Pot Roast Seasoning to the pot around the roast.

Close and lock the lid again. Select the “Manual” (or “Pressure Cook”) button and set the cooking time for an additional 10 minutes on high pressure. After this cooking cycle finishes, perform another Quick Pressure Release.

Once the steam has fully released, open the lid. At this point, you can either carefully remove the roast to a cutting board for slicing, or if you prefer shredded meat, use tongs to easily pull it apart right in the pot. Add the butter to the pot and stir gently to melt and incorporate it into the rich gravy. Serve the tender roast with a generous spoon of vegetables and gravy. Garnish with fresh parsley if desired for a touch of freshness.
Slow Cooker Method

Heat a large skillet over medium-high heat with olive oil. Rub the beef roast with salt and pepper and sear it on all sides until deeply browned. Once seared, transfer the roast to your slow cooker.

Add all remaining ingredients to the slow cooker, EXCEPT for the butter. Cover and cook on high for 4 to 6 hours, or on low for 8 to 10 hours, until the beef is fork-tender. Stir in the butter at the very end of the cooking process for added richness.
